Healthy Turkey Meatballs:

I’m the first to admit that I definitely am no chef.  That being said, I try to whip up something easy for dinner about 4 days during the week (in those days I count steaming chicken dumplings and edamame from Trader Joe’s as a dinner…hold the judgement).  This is one of my family’s favorite recipes that honestly takes minutes to prepare and cook….turkey meatballs and sauteed broccoli. You can prepare this dish over whole wheat pasta or on ciabatta bread/italian roll, toasted with shredded parmigiani.

Ingredients:

1 package of 99% fat free ground turkey meat

1 jar of marinara sauce (I prefer Ragu Basil and Tomato)

salt

garlic powder

frozen broccoli florets or fresh broccoli head

rolls or pasta

parmigiani

 

Preparations:

Empty jar of sauce into a large pot.  Lay turkey meat out on a cutting board or large flat surface and sprinkle on salt and garlic powder, to your liking.  Form turkey meat into balls  and drop them into the pot, spreading them out so there’s room in between each one (they will enlarge slightly).  Heat on medium until the sauce bubbles, stirring every few minutes.

Sautee the broccoli in a pan, lined with Pam cooking spray.  Add a pinch of salt and garlic powder, and for maximum flavor add a drop of olive oil.  That’s it!  So easy and delicious.  I prefer to scoop out a toasted roll, add in sliced  meatballs and top with shreds of parmigiani.
